Its mix of vegetarian and meat- based dishes is designed to appeal to both the vegetarian and non-vegetarian markets. Superlegumes will also address health benefits which are numerous, as well as explore preparation, nutritional information and environmental benefits (it is a high-protein food source that is gentler on the earth as it grows). As with whole grains, legumes are an under-utilised whole food, yet they have played an important role in human nutrition for centuries. Like many of the ancient grains, they have been bypassed and overlooked in the modern kitchen, which is now often stocked completely with highly processed foods.
